Pancit Canton Recipe: Fabulous Filipino One Pot Noodle Dish
This is a recipe we learned when we lived in the Philippines. It's very easy to prepare and requires only one pot (less dishes). It's a noodle dish that is similar to the Filipino Lo Mein noodles. This pancit recipe uses pancit canton noodles made from wheat.
Pancit Canton:
- 1 box
pancit Canton noodles
- Pork
tenderloin cut in small pieces
- Half a
head cabbage chopped
- 1/2 of an
onion diced
- 4 cloves
garlic, minced
- 1 carrot
cut into small pieces
- 1/2 cup
chicken broth
- Soy sauce
for taste

Pancit
noodles are the only thing that can be a bit tricky to locate. Pancit
noodles are available in Asian markets and can be purchased dry. They can
also be ordered online through specialty realtors or event organizers through Amazon. Everything else is available at any
grocery store.
What Are the Different Types of Pancit?
- There are
two types of pancit: Pancit Canton or Pancit Bihon. It is the type of
noodles that makes the difference.
- Pancit Canton noodles is a wheat-based
pasta.
- Pancit
Bihon noodles
can be described as rice noodles that are also thinner. Both are
delicious!

In
a large, heavy pot, heat a little oil. Once the onions are browned and
tenderloin is cooked, add the diced onion. Turn the heat up to medium-high
heat and cook the pork until it is tender. Meanwhile, sauté the onions in a
large pot with a bit of oil. Set aside the onions and pork in a bowl.

Add
about half a cup chicken stock to deglaze. There are many options, but I
usually use chicken stock.

Grab
all the delicious browned bits of pork stuck to your bottom.

Add
the chopped cabbage, minced garlic and carrots. I buy a large bag of
coleslaw mix from Sam's Club and only use half of it. It's so easy and the
carrots and cabbage are already chopped. I hate the process of cutting
carrots. I'll leave them alone if I have to. The vegetables should be
cooked in the broth with the broth until softened (but not completely--about
halfway through).

While
the noodles are cooking, heat some tap water to warm the pancit
noodles. It's not necessary to boil the pancit noodles.
How long do you soak Pancit Noodles for?
- Allow to
soak for 3 minutes. The noodles should soften but not
completely. You want the noodles to be about halfway done.

Drain
the pancit noodles and then add them to the large saucepan with the
vegetables. Add the garlic and pork back in. Mix in the soy sauce
until the noodles turn brown. Mix all ingredients together and cover the
pot. Let the noodles and veggies steam for another couple of minutes.

This
dish is traditionally served with calamansi, a type of citrus that is common in
the Philippines. Calamansi tastes like a tart mix of limes and
tangerines. Even though I planted a calamansi in my backyard, it is not
calamansi time. However, it is lemon season. You can find calamansi,
but it is not easy to find. Just before you eat, squeeze fresh lemon juice on the
noodles. Although it is not exactly the same, it is close.

One
batch can make a lot of food. I made only one batch of this recipe for the
Firefly party and still had some leftovers. (Yum!) This is my
favorite dish for potlucks.
